This is another of Mr Mike’s recipes, late of Noida Radisson fame.
Ingredients:
1/2 lb of sashimi grade Hamachi.
1 lb of salt
1 lb of sugar
Olive Oil
Lime or lemon
1 Tablespoon of Sesame seeds for toasting
Capers.
Microgreens
Finishing Sea Salt
Preparation:
Mix salt and sugar thoroughly and use it to completely encase the Hamachi while in a Tupperware or equivalent container. This will firm the flesh. Refrigerate for at least 90 minutes. Toast the sesame seeds until toasted to personal preference.
Remove Hamachi and rinse off all salt and sugar, pat dry. Slice and plate sashimi. Place a caper on each piece of fish. Garnish each with Seasame seeds, micro greens and the add a dash of Olive Oil and lime juice. Just a drop of each will do. A dash of Sea Salt is the final touch.
